Chance seems to (??) like beets. I found beets harder to cook than most veggies and eventually got frustrated, dumped them into the processor and wizzed the poop out of them. I read on the web that you should boil them to get out the nitrates....they seemed to lose a lot of their colour, but then I needed to add a lot of cooking water to thin them out, so the colour, as you can see, was quite vibrant.
Chance wore an old stained sleeper for the occasion, "just in case".
